The moment they come out of the oven, the entire batch vanishes before I can take a bite.

Parmesan Garlic Chicken Bites are a delightful twist on a classic favorite, perfect for those looking to enjoy a tasty meal without the carbs. These bites are inspired by my love for Italian flavors and the desire to create a dish that's both family-friendly and low-carb. With a golden, crispy finish and a rich, savory taste, these chicken bites are sure to become a staple in your household. They're great for weeknight dinners or as a crowd-pleasing appetizer at gatherings.
These chicken bites pair wonderfully with a fresh garden salad or a side of roasted vegetables to keep the meal light and healthy. For a more indulgent option, you can serve them with a creamy cauliflower mash. A side of marinara sauce makes a delicious dip, adding a tangy contrast to the savory bites. If you're entertaining, consider a platter with assorted cheeses and olives to complement the flavors.
Low Carb Parmesan Garlic Chicken Bites
Servings: 4

Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup grated Parmesan cheese
1 tablespoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons melted butter
1 tablespoon chopped fresh parsley (optional, for garnish)
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, combine the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
Dip each piece of chicken into the melted butter, then roll in the Parmesan mixture to coat evenly.
Arrange the coated chicken pieces in a single layer on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and golden brown.
Optional: Sprinkle with chopped fresh parsley before serving for a pop of color and freshness.
Variations & Tips
For a spicier kick, add a pinch of cayenne pepper to the Parmesan mixture. If you have picky eaters at home, you can substitute chicken tenders for a more familiar shape. For a gluten-free option, ensure that your Parmesan cheese is free from any fillers. You can also experiment with different herbs, such as rosemary or thyme, to change up the flavor profile. If you prefer a more intense garlic flavor, add minced fresh garlic to the butter before coating the chicken.
