This savory, cheesy bacon quiche has been a beloved breakfast staple in our home for years. After all, what’s not to love? A buttery, flaky crust filled with fluffy eggs, melty cheddar, and crispy bacon—it’s the ultimate comfort food to start your day right.
Why You’ll Love This Recipe
I’m a big fan of hearty, make-ahead breakfast dishes—especially ones that pack in the protein. This quiche delivers all that and more. It’s a perfect blend of classic breakfast flavors in one easy-to-serve dish.
My first experience with this quiche was about a decade ago, when my sister made it during a visit. One bite in, and I was hooked. I had to get the recipe—and now, it’s a go-to in my own kitchen.
Quiche is incredibly adaptable and forgiving. You can make the dough and prep the filling a day in advance, then simply assemble and bake when you’re ready.
Ingredients
For the crust:
2½ cups all-purpose flour (plus extra for rolling)
1 cup unsalted butter, cold and cubed
1 teaspoon salt
1 teaspoon sugar
6–8 tablespoons ice water
For the filling:
4 large eggs
½ cup heavy cream
½ cup milk
¼ teaspoon salt
¼ teaspoon black pepper
12 ounces bacon, cooked and crumbled
1 cup shredded cheddar cheese
Instructions
Prepare the Crust:
In a food processor, combine the flour, salt, and sugar. Add the butter and pulse until the mixture resembles coarse crumbs (butter pieces no larger than peas).
Gradually add ice water, pulsing until the dough begins to come together.
Turn the dough out and form it into two discs (about 4–5 inches wide). Wrap each in plastic wrap and refrigerate for at least 1 hour, or overnight.
Assemble the Quiche:
Preheat your oven to 350°F (175°C).
Roll out one disc of dough on a floured surface and fit it into a pie dish.
In a mixing bowl, whisk together the eggs, cream, milk, salt, and pepper.
Sprinkle the cooked bacon and shredded cheese evenly into the crust. Pour the egg mixture over the top.
Bake:
Bake the quiche for 45–50 minutes, or until the center is set and the top is lightly golden.
Let it cool for a few minutes before slicing.
