Instructions

  1. Prepare the Crust:

    • In a food processor, combine the flour, salt, and sugar. Add the butter and pulse until the mixture resembles coarse crumbs (butter pieces no larger than peas).

    • Gradually add ice water, pulsing until the dough begins to come together.

    • Turn the dough out and form it into two discs (about 4–5 inches wide). Wrap each in plastic wrap and refrigerate for at least 1 hour, or overnight.

  2. Assemble the Quiche:

    • Preheat your oven to 350°F (175°C).

    • Roll out one disc of dough on a floured surface and fit it into a pie dish.

    • In a mixing bowl, whisk together the eggs, cream, milk, salt, and pepper.

    • Sprinkle the cooked bacon and shredded cheese evenly into the crust. Pour the egg mixture over the top.

  3. Bake:

    • Bake the quiche for 45–50 minutes, or until the center is set and the top is lightly golden.

    • Let it cool for a few minutes before slicing.
