Pumpkin Spice No Bake Cookies


 

Ingredients:

 

3 cups rolled oats

1 cup pumpkin puree

1/2 cup peanut butter

1/2 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/2 teaspoon pumpkin pie spice

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

1/4 teaspoon salt


Directions:

 

In a medium saucepan, combine the peanut butter, honey (or maple syrup), cocoa powder, and salt. Cook over medium heat, stirring constantly until the mixture is smooth and well combined.

Remove from heat and stir in the pumpkin puree, pumpkin pie spice, cinnamon, and vanilla extract until well mixed.

Add the rolled oats to the mixture and stir until the oats are evenly coated.

Using a spoon or cookie scoop, drop spoonfuls of the mixture onto a parchment-lined baking sheet, forming cookies.

Refrigerate the cookies for at least 30 minutes to allow them to set.

Once set, enjoy immediately or store in an airtight container in the refrigerator.
