🧾 Ingredients

For the cauliflower

  • 1 large cauliflower, cut into florets
  • Salt (to taste)
  • Water (for boiling)

For the creamy base

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 200 ml (¾ cup) cream or milk
  • 100 g (1 cup) grated cheese (Parmesan, mozzarella, or cheddar)
  • Salt & black pepper
  • ½ tsp nutmeg (optional)

For the crispy topping

  • 1 cup breadcrumbs (or crushed toast)
  • 2 tbsp melted butter or olive oil
  • 1 tsp dried thyme or parsley
  • ½ tsp garlic powder
  • 2–3 tbsp grated Parmesan

👩‍🍳 Instructions

  1. Cook the cauliflower
    • Boil cauliflower in salted water for 5–6 minutes until just tender.
    • Drain well and place in a greased baking dish.
  2. Make the creamy sauce
    • In a pan, heat butter + olive oil.
    • Sauté onion until soft, add garlic for 30 seconds.
    • Add cream/milk, cheese, salt, pepper, and nutmeg.
    • Stir until smooth and slightly thick.
  3. Assemble
    • Pour sauce evenly over the cauliflower.
  4. Prepare topping
    • Mix breadcrumbs, melted butter, herbs, garlic powder, and Parmesan.
    • Sprinkle generously over the casserole.
  5. Bake
    • Bake at 190°C (375°F) for 35–40 minutes, until golden and crispy on top.
  6. Rest & serve
    • Let sit 5 minutes before serving.
