Crispy Baked Cauliflower Casserole

Ingredients
For the cauliflower
- 1 large cauliflower, cut into florets
- Salt (to taste)
- Water (for boiling)
For the creamy base
- 2 tbsp butter
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200 ml (¾ cup) cream or milk
- 100 g (1 cup) grated cheese (Parmesan, mozzarella, or cheddar)
- Salt & black pepper
- ½ tsp nutmeg (optional)
For the crispy topping
- 1 cup breadcrumbs (or crushed toast)
- 2 tbsp melted butter or olive oil
- 1 tsp dried thyme or parsley
- ½ tsp garlic powder
- 2–3 tbsp grated Parmesan
Instructions
- Cook the cauliflower
- Boil cauliflower in salted water for 5–6 minutes until just tender.
- Drain well and place in a greased baking dish.
- Make the creamy sauce
- In a pan, heat butter + olive oil.
- Sauté onion until soft, add garlic for 30 seconds.
- Add cream/milk, cheese, salt, pepper, and nutmeg.
- Stir until smooth and slightly thick.
- Assemble
- Pour sauce evenly over the cauliflower.
- Prepare topping
- Mix breadcrumbs, melted butter, herbs, garlic powder, and Parmesan.
- Sprinkle generously over the casserole.
- Bake
- Bake at 190°C (375°F) for 35–40 minutes, until golden and crispy on top.
- Rest & serve
- Let sit 5 minutes before serving.
