Ingredients
1 tablespoon butter (for greasing pan)
3 cups all-purpose flour
2½ tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1½ teaspoons garlic powder
1¼ cups shredded cheddar cheese
2 tablespoons fresh chives, chopped
12 oz light beer (pilsner or lager)
2 tablespoons melted butter (for topping)
Instructions
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with 1 tablespoon of butter and set aside.
In a large bowl, whisk together flour, sugar, baking powder, salt, and garlic powder.
Add the shredded cheese and chives, stirring to coat them in the dry ingredients.
Pour in the beer and stir gently until just combined. (The batter will be thick.)
Transfer batter into the prepared pan and drizzle with the melted butter.
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10–15 minutes before removing and slicing.
Tips & Variations
For a richer flavor, try a darker beer like amber ale or stout.
Add a pinch of cayenne or smoked paprika for a subtle kick.
Swap cheddar for pepper jack or gouda for a twist.
Best served warm with butter — or alongside soup or chili!
