Marinated Cucumbers, Onions, and Tomatoes:


 

Ingredients:

3 medium cucumbers, thinly sliced

1 medium onion, thinly sliced

3 medium tomatoes, cut into wedges

1/4 cup olive oil

1/4 cup white or apple cider vinegar

2 tablespoons water

1 tablespoon sugar (or honey, optional)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Fresh herbs like parsley, dill, or basil (optional, for garnish)

Instructions:

Prepare the Vegetables:

Place the cucumber slices, onion slices, and tomato wedges in a large bowl.

Make the Marinade:

In a small bowl, whisk together olive oil, vinegar, water, sugar, salt, pepper, and garlic powder until well combined.

Combine:

Pour the marinade over the vegetables. Toss gently to coat everything evenly.

Marinate:
