Ingredients
4 medium russet potatoes
3 tbsp olive oil
½ cup grated Parmesan cheese

Instructions
1. Prep the Potatoes
Preheat oven to 425°F (220°C).
Wash and peel the potatoes, then cut them into even-sized fries or wedges.
Place in a bowl of cold water and soak for 20 minutes to remove excess starch.
Drain and pat dry with a clean towel.
2. Season the Fries
Place dried potatoes in a large bowl.
